So like you said, Ciel was giving him the name of the dog who had been a friend and protector since that was probably the first name that came to mind. I get the feeling, that because Sebastian was annoyed with the fact that his name comes from a dog, that some may think Ciel did it on purpose.

It would also make sense to why it was so easy for ciel to summon Sebastian because Sebastian was probably looking after him after his previous owner died and he did not get his soul because he died in a fire so instead of finding a new soul he took the hopeless soul of ciel that was right in front of him.
